Purpose of Role:
Provide a varied, appealing, wholesome and nutritious diet, suited to individually
assessed and recorded requirements at flexible times. Provide refreshments and
meals for relatives and visitors as required, and for staff as agreed with the
Registered Manager. Oversee and give instruction to the team of Kitchen
Assistants. Coordinate all aspects of kitchen production so that food is prepared
to the agreed standard and that time deadlines are met.

Core Responsibilities & Duties:
 Implement and supervise all aspects of kitchen control e.g. menus,
hygiene, health and safety, staff, cleaning and waste control
 Prepare menus for the nursing home considering the content, balance,
colour and nutritional values, in line with agreed budget
 Prepare, cook and serve well-presented meals at the agreed times,
minimising any food wastage
 Provide residents with three full meals each day (at least two of which
must be cooked) at intervals of not more than five hours during the day
 Ensure that hot and cold beverages and snacks are always available
 To prepare special diets for residents as directed by the nursing staff
 Ensure provision of cultural or religious dietary needs as per individual
care plan
 Consult with residents on a regular basis to ensure that their needs and
choices are being met
 Work within agreed budget guidelines on staff costs and consumables and
to cooperate in any action necessary to keep to set budget
 Order food supplies and catering consumables and maintain the agreed
stock levels of food
 Carry out stock takes at the end of each month
 Supervise, develop and train colleagues and be a key part of the induction
process
 Carry out colleague supervisions and appraisals according to the Home
policy
 Hold monthly meetings with kitchen staff and record minutes
 Understand H.A.C.C.P, ensure all staff adhere to H.A.C.C.P and all
documentation is completed and signed by the appropriate staff
 Ensure that the Health and Safety standards in food provision areas are
met at all times
 Implement and maintain an agreed deep cleaning schedule for the kitchen
 Comply with equipment approved usage guidelines and to work in a safe
manner
 Complete monthly audits for kitchen reporting to the Registered Manager
 Attend resident/relative meetings whenever possible
 Assist in the preparation of function menus and costing
 Co-operate with special requests from the Registered Manager and
residents wherever possible
 Complete all mandatory training as required by the Home
 Carry out any other reasonable tasks as expected by the Registered
Manager

Role Specific Standards:
 Take overall control of the kitchen and ensure all procedures are adhered
too
 Produce 4 weekly, well balanced, nutritious, seasonal menus relevant to
residents based on individual wants and needs
 Correct use of the Food First Pathway, with fortified meals and desserts
 Correct use of IDDSI for those residents who require a modified meal
 Weekly ordering of food and beverage supplies from agreed company
suppliers
 Maintain a good relationship with our suppliers, ensuring the best quality
for our residents
 Manage all food costings in-line with monthly budget
 Speak to residents and gain feedback on meals
 Manage and monitor stock control and stock rotation in all areas
 Management of Head Cook/Cook rota to ensure the home has sufficient
cover
 Daily management of Kitchen Assistants and daily duties offering training,
support and guidance when and if required
 Complete ‘Safer Food Better Business’ daily/4-weekly checks
 Correct use of date labelling on all foods, to include open sauces and
condiments
 Daily checks and recording of food temperatures
 Daily checks and recording of fridge temperatures
 Complete all kitchen audits and cleaning schedules and record accordingly
 Attend Resident/Relative meetings,
 Provide celebration cakes and meeting buffet when required by Registered
Manager
 Complete regular operational checks of all equipment, reporting any
defects to Home Manager
 Ensure all cookware is clean and fit for use, reporting and defects to
Registered Manager
 Maintain In date ‘Food Hygiene, Level 2 certificate, a copy of which to be
supplied to Registered Manager
